Muffins

Saturday breakfast again…lemon muffins and choc chip muffins with loads n loads of fresh cream, my favourites. Of course, pair with a cup of warm tea or coffee is really nice. But frankly, muffins are pretty easy to bake.

Lemon Muffin

Ingredients:

(A)

2 cups flour

½ cup sugar

2 tsp baking powder

¼ tsp salt

1 tbsp lemon zest

(B)

¾ cup milk

½ vegetable oil

1 egg

1 tbsp lemon juice

Steps:

- Preheat oven at 220°C.

- Combine (A) in a bowl, mix gently

- Combine (B) in another bowl, whisk

- Pour (B) into (A) and fold

- Fill 2/3 of the mixture into the muffin cups and bake for 20-25 minutes.


See…told you it’s easy! (Eh, i’m still figuring out what’s the difference between muffins and cup cakes)

Sunday…

Waiying, I’m very happy to get to meet you up yesterday oh. Had a nice time shopping with you. Evening me and a friend had Korean food, was really nice but the kimchi soup is really a lil’ too spicy but I still like it though. Haha~

Emo

Erm…today feeling a lil’ emo…I don’t know why though.I just missing home so much, missing dad, mum, bro, sis and everyone at home. I just felt like going home hugging them and tell them that I love them so much~ I miss my bed, my not-so-soft-bear, my lil’ cooking heaven back home. And I miss YOU so much~ wish I could hug you tight and cry out all I want~

KL LookOutPoint

Saturday was a great day…woke up really early in the morning. I was too enthusiast to make breakfast for my aunt n family. So I made scones, with butter, fruit jam and of course FRESH CREAM! Yummy yummy. =P This time pictures taken were not so nice, maybe I’ll post some next time ya~

Sunday was equally great!!! Hung out with a friend, a really nice friend~ We went for lunch at Manhattan Fish Market and this is what we had:

Shopping~~~ Bought a bunch of hair clips…hehe. And then we decided to go to KL Look Out Point. Please don’t ask me about the direction, I definitely can’t help you out. So google or wikipedia it alright? (For those who know me, I am sure you guys know how good I am with directions, right? *paiseh*) The best I can do is to post up a picture of that View from the Look Out Point. The view is superb. That night was a lil’ cool, having a cup of warm peach tea is just simply nice. Thanx my dear friend!

Joseph Salvati

Today was a tiring day. After dinner my hand simply lifted up the latest edition of reader’s digest which Fei lent to me. I kept flipping until I reach page 34 with a picture of an old man in his 70s. The title of that article “The Exonerated”. This article is about Joseph Salvati, a man who spent 30yrs behind bars for a crime he did not commit!

In 1967 Joseph was arrested, accused for being a part of Edward Deegan’s murder. He was then a husband to Marie and a father to four young children. Salvati, now 75, was proven innocence and was finally released with the help of Victor Garo who accepted his case without charging a cent. I kept reading on and without realizing it, my tears started to stream down my cheeks.

What touches me deeply is the undying love of Joseph and Marie. In these 30 yrs, Marie would make her way to visit Joseph every Saturday and she worked all her life to support the whole family. She never gave up hope and continued loving Joseph. Joseph on the other hand, never failed to send a weekly greeting card, which he managed to get using his prison wages of 15 cents a day. “Next year, maybe we will be together,” he would write. Or, “My every thought is of how much I love you, so I’m never alone” [quoted from RD]. Praise the Lord, today they finally have the opportunity to spend quality time together!

It’s not a year or two, it’s 30 solid yrs! It’s so amazing how they retained their love with all these hardships. This article is a must read for this month.

Weekend in Ipoh

Last weekend I was back to Ipoh!!! Guess what? Ya, more “experiments” on new recipes. A lot a lot of cheese and I’m chubbier. =.=”. Recipes..well later. I’m really happy to get to see my little niece again. She’s so cute!!! Had fun hanging out with my parents and siblings, had home cooked meal, and “experimenting” new recipes with my beloved Sis~

Bruschettas

Food and more food!!! This time i’m making bruschettas. First up is Baked Egg with toasted Baguette.

Next is Chicken Rolled Up Bruschetta (with fresh tomatoes, capsicum and basil). Taste really good and healthy!

Oh ya….almost forgot about the cheesecake. Recipe is as follows:

Ingredients:

Base (A) :

  1. 1 packet Oreo biscuits (crushed and filling separated)
  2. 2 tbs butter (melted)

Filling (B) :

  1. 250 g Cream Cheese
  2. 1 cup sugar
  3. 1 cup cream (whipped)
  4. 1 tbs gelatine (melt in 2 tbs water)
  5. 5 pieces Oreo biscuits (break into small pieces)

Steps:

  1. Add melted butter into crushed biscuits and press onto the base of the cake tin, refrigerate.
  2. Beat cream cheese and sugar until mixture is smooth.
  3. Add in gelatine into the mixture and remove from electric beater.
  4. Add in whipped cream and remaining Oreo biscuits into the cheese mixture and fold.
  5. Scoop the mixture onto the biscuits base and refrigerate for at least 3 hours.

Desserts

Ya ya…

Back to my updates on why I was so tired when I did not even work on Thursday~

After my car had towed back to the workshop and after negotiating with Mr Mohan, the mechanics fixing my car, I noticed it’s already half past 12, which means I was “forced” to take a whole day leave, instead of a half day *excuses*. Okay okay back to my activity of that day~

Since I did not have car to roam around so I decided to make my specialties, cream puffs and cheesecake!!! I used to go to one cake shop near my house to get cream puffs and it cost me RM1 for only 4 cream puffs (they’re almost half the size of those I made!) and then I semangat wanna learn how to make…n tadaa~~~ here they are:

Delicious Cream Puffs

It’s so easy u wouldn’t believe it! Let me include the how-to here ya…

Ingredients :

  1. ¼ cup butter
  2. ½ cup water
  3. 1 cup all purpose flour
  4. 4 eggs

Steps :

  1. Preheat oven at 250 degree Celcius.
  2. Combine butter and water and bring to boil.
  3. Add in flour and mix until it forms a ball and let the dough cool down a little.
  4. Remove dough and place in an electric beater/mixer and blend with medium speed.
  5. Add in eggs one at a time.
  6. Pipe/Spoon mixture onto baking tray and bake for 20 to 25 minutes.
  7. Remove from oven and gently split the puffs.
  8. Add in filling and they’re ready to be served! (Note : filling can be anything ~ cream, jam, chocolate sauce, custard or even icecream!)

Bad Day~

Aih~ bad day…Car broke down and ended up taking a day of unpaid leave ie RM16.67 gone…(fyi, that’s a day allowance for an intern aka cheap labor).

What actually happen? Well well, I drove to work as usual, then suddenly the radio and the air-cond were both not working…Then I tot “aiyah…normal lar…old car mar”. The “panicking moment” started when I almost reach the highway tol. I tried to turn down the window but that also was not working. I tried pressing over and over again still there was no response. So I pressed one small tiny button to unlock the doors but then again…NOT WORKING…*sweating*. Then I cut off the engine *act smart* thought tat it’ll auto unlock the doors. Aih~~~ also no response. Luckily the window turned down a little but still I couldn’t start my engine and I’m trapped in the car…yes, trapped inside! I suspected the battery might be empty. I only manage to put out my hand and wave to give signals to the cars queuing behind. Then there is this uncle in his Waja, took over, wound down his window and was shouting “Rosak at least on the hazard lights lar”. I was like DUH~~~ I’m trying okay! Darn frustrated?! Aih~ I just called n kept calling for rescue. few moments later my uncle manage to call up the mechanics and my cous’ came to pick me up. Just long story short…there’s problem with the alternator and some other parts. The fixing cost me RM588!!! Gosh…that’s even more than my monthly pay!!!

However, I was really blessed that at least the mere 8cm opening of the window allowed me to hand the keys to the guy, else I would be dead suffocated! Thank GOD!!!

Although didn’t get to work today but still had a tiring day. Not working and yet tired? Erm…tell you in my next post ya~

FIRST

Arrgggghhh….didn’t expect working life is like this wan…can simply die of boredom. And guess what??? I got hooked up in reading somebody else’s blogs!!! Haha…Maybe it’ll be nice for me to start one too…Well then wait for my posts ya. ( Hope i’m not a bad blogger oh… *fingers crossed* ). Adious~
